Ippodo's organic matcha is unlike any other. Unlike other types of green tea, matcha is grown in shaded fields to reduce astringency and bring out the sweet umami flavor. Starting around the end of April, Ippodo's entire matcha tea field is gradually covered until it's time to cultivate them. The tea leaves are then picked by hand, processed, then carefully ground into a fine powder in a stone mill.

Knowing the right time to shade the field is vital, so cultivating matcha requires years of experience and wisdom. The matcha that makes it onto store shelves after this lengthy process is, simply put, the best in the bunch. A natural companion to Japanese sweets, matcha also pairs well with dairy products and goes wonderfully with pastries and confections. The light taste and rich fragrance of matcha makes it easy to drink; we recommend sipping a cup after meals or first thing in the morning.
